Chicken Wrapped Prosciutto
For those of you who are getting to know me on a purely digital basis and do not know me in person, let me tell you that I am absolutely obsessed with Chrissy Teigen and John Legend. I want to be them individually, I want to be their best friend, and I want to be their child. While my fandom may seem a bit unusual, it was Teigen’s Instagram that inspired this recipe. That and a mix of browsing Pinterest.
Recently the comedic swimsuit model created an easy breakfast meal which contained prosciutto. Hence why I created a chicken stuffed with ricotta and wrapped in prosciutto meal. As you know I consider myself an honorary Italian after having Italian nannies as a small child and studying abroad in Florence my Junior year of college, so I’m a big fan of prosciutto, dry salami, wine, and leather goods. Although I made this meal for an everyday weeknight dinner, I feel that it would be a great main course for a dinner party. For your next event whip up this dish and you’re sure to wow your friends and family.
-Baby Mixed Greens
-Set oven to 350 degrees
-Cut a small pocket in the chicken breast to stuff with ricotta cheese
-Stuff chicken breast with 1 spoonful of ricotta cheese
-Wrap prosciutto around chicken breast
feel free to stick a toothpick to connect the two ends of prosciutto
-Bake and enjoy!
