Grilled Chicken with Lemon

As a somewhat recent post-grad flying from the eagle’s nest and living on her own, I know that I can’t always get away with a bowl of popcorn and a glass (or 3) of wine for dinner. I recently purchased a new cookbook from Food52 called Genius Recipies: 100 Recipes That Will Change the Way You Cook. I believe what makes people get the energy for making a home-cooked meal is the availability of ingredients to them and the simplicity of the recipe. Unless you’re Julia Child’s apprentice, no 25 year old is going to want to make Duck L’Orange. Simplicity is what makes this cookbook great. Simplicity is also what makes this chicken with lemon recipe great. Simply season and grill the chicken for 30 minutes and you have a meal. If it were any easier it would be take-out.

Ingredients:

-1 chicken breast (or the amount you need for a serving)

-1 lemon

-2 tablespoons of olive oil

– 4 garlic cloves

-salt and freshly ground pepper

Directions:

-Pour 1 tablespoon of olive oil in a large heavy skillet and put on medium heat

– Season both sides of the chicken breast with salt and pepper

-Cut the lemon in half and squeeze lemon halves into a small container to collect the juice

-Add chicken to the skillet skin side down. Without moving the chicken let simmer for 15 minutes on medium-low heat

-After 15 minutes turn the chicken over and add in the lemon juice and garlic cloves
